We are currently hiring for a Head Chef specializing in authentic Mexican gastronomy, distinct from Tex-Mex style. This is a full-time position dedicated to genuine Mexican culinary traditions.
About the Role
Do you have a profound appreciation for the foundations of Mexican cooking? We are searching for a Chef with extensive knowledge of traditional and regional Mexican cuisine to oversee our kitchen and imbue every dish with the authentic spirit of Mexico.
As the Head Chef, your responsibilities will include:
- Overseeing the creation of genuine Mexican dishes inspired by various regions, honoring indigenous traditions and time-honored techniques.
- Contributing to a menu that reflects the rich cultural and culinary diversity found across Mexico.
- Procuring and selecting premium ingredients, emphasizing native chiles, corn, herbs, and other regional essentials.
- Instructing kitchen personnel in traditional cooking methods such as nixtamalization, crafting tortillas by hand, and preparing moles, adobos, and salsas.
- Maintaining culinary authenticity while introducing creative plating and seasonal menu adaptations.
Ideal Candidate Qualifications
- Possesses in-depth understanding of Mexican gastronomy, culture, and its culinary history.
- Has practical, hands-on experience preparing a broad spectrum of regional Mexican dishes.
- Demonstrates a commitment to preserving traditional cooking methods and conveying Mexico\'s story through food.
- Exhibits strong leadership and organizational abilities in a kitchen environment.
- A culinary degree or formal training in Mexican cuisine is advantageous, though significant professional experience will also be considered.
