Are you a talented professional with a deep enthusiasm for crafting sushi? We are looking for an individual like you to fill the role of Sushi Chef. In this position, your duties will include arranging and supplying your workstation for service and preparing all sushi dishes in collaboration with the broader kitchen team.

Responsibilities

  • Demonstrate comprehensive knowledge of the menu and culinary standards, including garnishes and sauce preparation.
  • Capable of making immediate modifications to dishes to meet guest preferences while adhering to the menu framework established by the Executive Chef and Chef Nakazawa.
  • Maintain awareness of dietary limitations, allergies, and sensitivities, with the ability to make appropriate adjustments within established parameters.
  • Conduct regular inventory checks of fish and shellfish, accounting for any potential seasonal menu changes.
  • Possess expert skills in cutting, slicing, and filleting, along with techniques such as pickling, curing, smoking, and scoring.
  • Minimize waste by optimizing the yield of ingredients like fish, rice, and sauces.
  • Communicate menu and product changes clearly to all culinary team members.
  • Ensure all food items are prepared correctly according to company recipes and standards.
  • Complete assigned shift tasks—including preparation, opening, and closing checklists—promptly and thoroughly in line with department expectations.
  • Oversee your culinary station from beginning to end.
  • Prepare sushi items in coordination with the kitchen staff for guest consumption.
  • Clean assigned equipment thoroughly and in a timely manner.
  • Manage proper storage temperatures and rotation procedures in compliance with Department of Health regulations.
  • Maintain sanitation to Department of Health standards; keep the work area clean and organized.
  • Notify the Manager on Duty and/or Executive Chef immediately of any Department of Health or OSHA/workplace safety violations.
  • Maintain full knowledge of the correct maintenance and use of equipment; use tools and equipment only as intended, safely and properly.
  • Inform the Manager on Duty and/or Executive Chef of any needs for products, materials, or equipment.
  • Perform additional duties as assigned by the Chef and management team.

  • Communicate information effectively and efficiently.
  • Available to work nights, weekends, holidays, and a variable schedule based on business needs.
  • Ability to perform essential job functions under pressure while maintaining a professional demeanor during stressful situations.
  • Maintain a general understanding of the company\'s restaurant and bar concepts, location, transportation, and management team.
  • Participate in community events and support the company\'s corporate social responsibility objectives.

Salary: $20 - $23 per hour
