Anajak is a neighborhood bistro with over four decades of history, offering Thai specialties alongside a distinguished wine selection. Chef Justin Pichetrungsi honors his father\'s legacy by preserving traditional recipes while also presenting a chef collaboration-driven Thai Taco Tuesday and a seasonal multi-course Omakase menu. The kitchen at Anajak is distinctive for its three separate services.

First, A La Carte Dining is available from Wednesday through Sunday. This service features the restaurant\'s classic, enduring menu of curries, fried chicken, seasonal fish, and wok-fired dishes, which form the core of the culinary offerings. The extensive wine list highlights both traditional and innovative selections from regions such as the Mosel, Champagne, and Burgundy.

Second, Thai Taco Tuesday, or TTT, is a weekly dining event that originated during the pandemic. It offers a rotating menu of tacos, tostadas, and occasional chef collaborations, with cooking and service taking place in the outdoor alley.

Third, Omakase is offered on the final weekend of each month. This is a relaxed, multi-course tasting menu held in the main dining room, showcasing seasonal market produce, seafood, meats, alliums, and fermented items.

Job Summary

The Line Cook will be responsible for efficiently preparing, cooking, and garnishing a variety of foods in accordance with our established standards. This role also includes presenting and describing dishes to guests.

Responsibilities

  • Adhere to proper food storage and handling procedures.
  • Execute menu items from start to finish, including ingredient preparation, protein butchery, cooking, and plating.
  • Deliver, clear, and reset dishes prepared by you and the kitchen team.
  • Work cooperatively with both kitchen and dining room staff.
  • Uphold the company\'s food quality standards.
  • Perform technical culinary production, portion control, and maintain service standards.
  • Accurately weigh and measure ingredients based on recipe specifications.
  • Keep workstations and equipment clean and sanitary.
  • Ensure sufficient stock of food products at the station for seamless service.
  • Maintain a safe and positive working environment.
  • Demonstrate regular, predictable attendance and punctuality.
  • Follow proper plate presentation and garnish setup for all dishes.

Qualifications

To succeed in this role, an individual must be capable of performing each essential duty satisfactorily. The following requirements represent the necessary knowledge, skill, and ability. Education: A High School diploma or General Education Degree (GED) is required.

Required Experience:

  • Minimum of two years of fine dining line cook experience, or an equivalent combination of education and experience.
  • Understanding of various cooking methods, ingredients, equipment, and procedures.
  • Solid knowledge of food products and skilled application of culinary techniques.
  • Knowledge of food preparation and cooking, with high attention to detail in plating.
  • A passion for food, exceptional work ethic, and dedication.

Knowledge, Skills, and Abilities

  • Conversational English vocabulary.
  • Ability to read and comprehend simple instructions and memos.
  • Ability to address problems involving a few concrete variables in standardized situations.
  • Strong team-oriented approach with coworkers.
  • Proficient knife skills and experience with the following kitchen equipment:
    1. Charcoal/Wood-burning Grill
    2. Burners
    3. Deep fryer
    4. Steamers
    5. Cryo-vac machines
    6. Scales
    7. Wok

Physical Requirements

While performing job duties, the employee is regularly required to stand, walk, use hands to handle or feel objects and controls, reach overhead, talk, hear, taste, and smell. Specific vision abilities required include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.
